We as moms can feel overwhelmed sometimes. We want to cook healthy food for our families, and yet it can be challenging to do that while also not spending an arm and a leg. We want to get good, nutritious meals on the table, but prices are high and time feels limited.

Making dinner can be overwhelming.

But maybe it doesn’t have to.

What if there was a food that was easy, budget-friendly, healthy, and delicious?

Today I want to share with you a food that ticks all those boxes and more!

It’s one of my family’s favorite foods and a staple in our house.

Eggs.

Why you should eat more eggs.

1. They’re full of protein.

One boiled egg has 6 grams of protein,1 and if you’re like me, you never just eat one egg on its own! Eat a couple at a time, and you’ve got a protein-rich meal!

2. They carry important vitamins.

Eggs contain some good B vitamins and vitamin A,2 making them even more nutritious

3. They’re versatile.

You can eat eggs so many different ways. They can find their way into almost any meal. Sweet, savory, scrambled, baked, boiled, or fried, eggs can come in so many different forms.

4. They’re cheaper than most meat.

Meat can be pricey. Cheap, delicious protein can feel hard to come by.

However, eggs are one of the cheapest protein sources you can find. Compared to most meat, eggs are more economical while still providing lots of protein.

5. They’re quick to prepare.

Eggs do not take long to prepare. It can take minutes to scramble or fry an egg, and even boiling or poaching can be a relatively fast process.

You don’t need to plan ahead or work ahead to cook eggs. They are ready to use whenever!

6. They’re easy to cook.

Eggs are not complicated. Kids can learn to cook them. They aren’t necessarily finicky or complicated. They’re simple and straightforward.

Now you may be wondering, I know eggs are good, but how do I eat them? I don’t want to eat scrambled eggs every day.

The truth is, you don’t have to!

There are so many ways to incorporate eggs into our diets. There are countless recipes and meal ideas that highlight this food, and today, I want to share some with you!

Omelets can feature so many different fillings. You can put meat (ham, sausage, bacon, etc.) or veggies (peppers, onions, tomatoes, spinach, etc.) inside. You can load them with cheese or fresh herbs. The options abound.

For me, egg sandwiches don’t get old. There is something about a soft, salty egg, between sourdough bread and melted cheese that just hits all the right notes.

FAQ About Egg Meals

1. Are eggs toddler-friendly?

Eggs are a common allergen, so please be wise when introducing them. But if you’re child is okay to eat them, eggs can be so toddler-friendly. Your child can eat scrambled eggs with his hands. He can munch on a boiled egg, or he can even enjoy an omelet.

Eggs have a very subtle flavor and don’t require a lot of skill to enjoy which make them a great toddler food option.

2. Do you buy free-range or grass-fed eggs?

I don’t. Sometimes we get given farm eggs which is a big treat, but usually we buy what’s cheap at the store. I don’t have a problem with this. It is a lovely, nutritious food nonetheless.
