We want what’s best for them, and that usually starts with a healthy, filling breakfast.
But sometimes breakfast can feel challenging. We feel too tired to make something nutritious. Our baby resists being spoon fed and would rather hurl oatmeal to the floor. Our toddler has strong preferences about what he or she would like to eat.
And this important meal can become overwhelming.

I don’t have a fail-proof solution.
But I do know this.
Breakfast can be simple.
With a little forethought and a good recipe, breakfast can go from a dreaded chore to an enjoyable routine in your day.
It doesn’t have to be fancy. You don’t need to make something new every day. In fact, we eat the same thing pretty much every morning.
No, breakfast doesn’t have to be complicated or show-stopping to be healthy and enjoyable.
So today, I want to share with you a much-loved recipe that I make on repeat in my house.
It’s Apple Cinnamon Baked Oatmeal.

Sea Salt
Salt balances sweetness and adds a more complex flavor.
Cinnamon
Warm and delicious, cinnamon is perfect with apples.
Milk
Milk adds moisture, creaminess, protein and good fats to this recipe.
Water
More moisture!
Eggs
Eggs add lightness, rise and extra protien.
Honey
Honey adds a subtle sweetness that is both delicious and nutritious.
Coconut Oil
Fat carries flavor, and coconut oil is a great option for this.
Apples

Raisins
Raisins are scrumptious and go really well with apples and cinnamon.

The method.
Preheat oven to 375 degrees F.
Grease a 9×13 (or a similar size) glass pan.
In a large mixing bowl, combine oats, baking powder, sea salt, and cinnamon. Mix together.

In a medium bowl, combine eggs, milk, water, honey, and melted coconut oil. Mix together.

Pour wet ingredients into dry ingredients, and mix to combine.

Dice apples.

Add apples and raisins to mixture. Mix together.

Pour mixture into pan.

Cook for 25-30 minutes or until edges are slightly brown and baked oatmeal is set.

Let cool slightly before serving.
