Immunity-Boosting Chicken Soup

While we might not like to admit it, it’s cold and flu season. Bugs and viruses are going around. We are forced to rest more, get together with others less, and find creative ways to regain our strength and ward off disease.

We as Moms want to do what is best for our families, and that desire is only heightened when our loved ones are ill. We want to give them the best foods and remedies, and we long for the day when everyone is well. Sickness makes us appreciate health so much more, don’t you think?

We Moms will do anything to get our families well, and sometimes we can grow fearful in the process.

Secondly, I want to share with you a delicious, immunity-boosting soup that you can make today! This recipe is chock-full of nutritious ingredients that can help make you stronger and more able to deal with whatever ailment you may encounter.

If you are needing some comforting dinner that’s packed full of immune-building ingredients, this recipe is for you! Serve it with some crusty sourdough bread or crackers. Top it with fresh herbs or sour cream! Feel free to get creative, and enjoy!

1. It makes you stronger.

Most of the ingredients in this soup have been specifically chosen for their immunity building properties. Things like garlic, bone broth, and fresh lemon are nutritious staples this time of year.

While I am so thankful for modern medicine, there are so many ways we can help our bodies naturally. Things like food, fresh air, rest, and light exercise can greatly impact our health when we’re feeling under the weather.

2. It’s flavorful.

This soup has a robust and well-rounded flavor profile. From the salty chicken to the tangy lemon to the subtle sweetness of the carrots, this soup is not lacking taste and is indeed quite delicious. Adding hot sauce at the end gives a little spice and accentuates the others flavors.

3. It’s easy.

This soup is not hard to make, and if you’ve already acquired your chicken and broth ahead of time, it can be made very quickly.

If you can peel and chop some veggies and stand at the hot stove for a while, you’re good to go! I really enjoy using my Dutch oven, but any large pot will do!

4. It has simple ingredients.

If you don’t know what to make for dinner, chances are you have the ingredients for this soup. This recipe calls for easy staples that you probably have in your pantry, fridge, or freezer. Nothing complicated.

What you’ll need.

Coconut Oil

Fat builds flavor. Don’t skimp on this one!

Onion

Onion is an aromatic and makes everything so tasty.

Garlic

Garlic is a nutritious powerhouse! Feel free to add even more garlic than called for! The more the better! I like to use fresh garlic and mince it in my garlic press.

Ginger

Ginger is perhaps an unexpected addition to this soup, but it’s bright flavor is a lovely addition. I buy minced ginger which makes cooking with it very easy.

Salt

Everything is better with a little salt, and you will find you need more salt than you probably think you need. I recommend around 3 tsp, but go ahead and season to taste.

Carrots

This vegetable is nutritious and sweet. It also adds a vibrant color that I just love!

Bone Broth

Bone broth is actually really easy to make! If you buy bone-in chicken thighs, you can throw them in the crockpot with some oil and lots of water. Cook them on high for four hours; strain out the liquid, and hurray! You’ve got delicious broth.

Water

This ingredient can be substituted with more broth if you prefer.

Basmati Rice

Basmati rice is the delightful grain in this wholesome soup. You could also you white rice, brown rice, or any that you like.

Chicken

Protein is so good for you. I like to buy chicken thighs, but you can use any kind of cut.

Lemon

Bright, tangy, and tasty! Make sure you opt for fresh lemon in this recipe.

Hot Sauce (optional)

Hot sauce packs a punch and rounds out the flavor profile nicely. We enjoy Frank’s Original, but Sriracha would also be tasty!

The method.

Begin by dicing one onion. Try not to cry!

Sauté it in some coconut oil on low heat.

Peel and finely chop your carrots.

Add them and 1 tsp salt to your onion mixture. The salt will help draw out hte moisture of your carrots. Cook until almost tender.

Add broth, water, and rice. Let simmer with lid on until rice is cooked.

Add chicken and 1 tsp salt.

Serve in bowls with a dash of fresh lemon juice, lemon zest, and some hot sauce!

FAQ about Chicken Soup

1. Can I make this in the crockpot?

Absolutely! Just make sure to precook your chicken and add more or less broth when needed. Also, I recommend not adding your chicken until the very end, so that it doesn’t get too soft.

2. Could I use fresh ginger in this recipe?

You totally can! Fresh ginger is so good for you and would taste amazing.

3. My husband doesn’t like soup. How can I make this meal more filling?

Add some quality bread and cheese! Also, opt for making this meal on a weekend or other free night. Go for something heartier on work nights.

Equipment

  • Dutch oven
  • Wooden spatula
  • cutting board
  • Large knife
  • Vegetable peeler
  • Garlic press

Ingredients
  

  • 1 tbsp coconut oil
  • 1 onion
  • 1 tsp ginger minced
  • 2 cloves garlic minced
  • 6 carrots
  • 2 tsp salt
  • 4 cups chicken broth
  • 1 cup water
  • ½ cup rice basmati
  • 1 cup chicken cooked
  • 1 lemon fresh
  • ½ tsp hot sauce optional

Instructions
 

  • Dice onion.
  • Saute onion, ginger, and garlic in coconut oil until translucent.
  • Peel and finely chop your carrots. Add carrots and 1 tsp salt to your onion mixture. Cook until almost tender.
  • Add chicken broth, water, and rice. Let simmer until rice is cooked.
  • Add your chicken and 1 tsp salt.
  • Serve in bowls with a dash of fresh lemon juice, lemon zest, and hot sauce.
