If you’re looking for a fresh, summery meal that is easy, cost-effective, nutritious, and delicious, this one is for you! I love bowl meals. People can build their own bowl by adding the toppings they like, which is also great for picky eaters and people with allergies. People can sort of choose their own adventure!
This recipe combines fresh garlic, probiotic-rich Greek yogurt and vibrant herbs to top some quality foods you probably already have in your pantry, fridge and freezer.
Makes 4 Servings.
What you’ll need:
- Chicken Thighs. This is the only cut of chicken I normally buy. It’s cheap, flavorful, and there’s usually a lot of meat on it. I also like getting the bone-in chicken thighs, because I cook them in the crockpot with water, oil, and salt and then strain the meat and bones out to get a nice broth for cooking the rice or for other recipes like soups and chicken pot pie.
- Olive Oil. This is for cooking the chicken thighs, but you can also substitute it for any other oil you have on hand.
- Water. This is also for cooking the chicken. Yummy broth here we come.
- Salt. Salt makes almost everything better.
- Rice. You can use any kind of rice, but we love Basmati.
- Cucumber. You often see cucumber in Greek meals.
- Tomatoes. You can use any type of tomatoes for a lovely juicy addition to your bowls.
- Feta Cheese. Feta is ideal for Greek food, but I often use Old Cheddar or whatever I have on hand.
- Greek Yogurt. This is the base for the yummy, garlic sauce.
- Raw Garlic. Delicious and so good for you!
- Fresh Oregano and Basil. Italian herbs are also often used in Greek dishes.

Directions
- To cook the chicken, place thighs in a crockpot with the olive oil, water and salt. Cover and cook on high for 4 hours.
- Strain out chicken broth into a bowl and allow chicken thighs to cool on a cutting board.
- Add any extra water to the chicken broth to make 6 cups.
- Combine 3 cups rice and 6 cups chicken broth in a large pot. Bring to a boil and then reduce heat to a simmer until all the broth evaporates. This makes the most delicious rice!
- To make sauce, combine Greek yogurt, minced garlic, salt, oregano, and basil. Stir and refrigerate.
- Dice cucumber and tomatoes.
- Grate cheese (if using cheddar).
- Remove chicken bones and skins.
- Combine rice, chicken, veggies, sauce, and cheese in a bowl.
