I love muffins! They tick so many boxes for me and what I need them to be. They tend to be more nutritious than most baked goods, making them not just dessert material but snack or breakfast options. I love making muffins for guests too, especially if I know there will be kids coming too. Muffins are both a treat and something we Mamas can feel good about giving our kids.

Muffins come in a wide range of flavors. You’ve got the banana chocolate chip, morning glory, rhubarb, and blueberry to name a few!

But have you heard of Pumpkin Streusel Muffins?

Once you make these, I think you’ll want to make them again and again.

I mean what is more “fall-ish” than pumpkin?

You see them stacked on porches and mantles. Carved, multi-colored and all different sizes, pumpkins are a great decorating piece this time of year. But they can also be tasty! Soups and breads, pies and pancakes can feature this autumnal ingredient in delicious ways! Coupled with warm spices like cinnamon, nutmeg, ginger, and cloves, pumpkin can be delectable indeed.

Another way to feature pumpkin is in muffins!

And here’s a recipe to do just that!

Let me share why I love it.

Why you’ll love these muffins.

1. They’re tasty.

Perhaps the most important reason to like these muffins, they’re tasty.

Creamy pumpkin, warm spices, and deeply sweet maple syrup, these muffins are filled with rich ingredients that bolster their flavor and texture. From the rich butter to the fragrant vanilla extract to the airy whipped egg, key ingredients combine to make something really special.

And did I mention there’s a streusel topping? Brown sugar, flour, cold butter, and cinnamon sit atop these flavorful snacks, adding sweetness, a little crunch, and even more spicy goodness.

2. They’re healthy.

Made with whole wheat flour and natural sugars, these muffins are a great alternative to processed and packaged snacks from the store. The whole wheat flour adds fiber. The maple syrup helps to not spike blood sugar. And if you use fresh pumpkin, you’ll be eating a fresh and perhaps local vegetable! 😀

3. They’re an easy snack.

Muffins make for an easy, on-the-go snack. If my toddler, husband, or I need a quick pick-me-up, I can just whip one or two of these out, pop them in the microwave, and have them ready in no time. We also like putting peanut butter and jam on them for an extra tasty treat!

4. They’re seasonal.

There’s something so homey about cooking and baking with the seasons. Eating gingerbread and turkey at Christmas, rhubarb in the spring, berries in the summer, and pumpkin in the fall just feel right.

Having recipes in your arsenal for each season might be a great way to prepare your home for the months ahead. Perhaps these muffins can become a tradition!

So now that I’ve explained why you’ll love these muffins, may I share the recipe with you?

What you’ll need.

– Whole wheat flour

This is a great alternative to the conventional all purpose flour. Filled with fiber and nutrients, whole wheat flour is a more nutritious choice while still giving a delicious muffin in the end.

– Baking Powder, Baking Soda

These key ingredients are important for the success of your recipe!

– Salt

Salt adds flavor and compliments the sweetness.

– Cinnamon, Nutmeg, Cloves

These delicious Autumn spices are arguably the star of the show (no offense pumpkin). They create a warm, rich flavor that will make your taste buds sing!

– Eggs

This recipe has you whip your eggs to create a light, fluffy texture. Eggs are also a binding agent for your muffin to make them hold together.

– Pumpkin Puree

The other star of the show and what these muffins are known for. Pumpkin can be used in so many recipes. Cook a whole pumpkin and puree yourself or buy cans from the store, either way this ingredient is versatile and so fun to incorporate into your festive dishes.

– Maple Syrup

The sweetening agent of choice, maple syrup is not only sweet but deeply flavorful. It is a healthy alternative to white sugar as it doesn’t spike blood sugar.

– Vanilla

This adds a lovely flavor to most sweet baked goods, and a little goes a long way!

– Butter

Ah, lovely friend. Butter makes everything tastier.

– Milk

Whole milk, 2% or even Skim will do! Milk adds moisture and some more nutrients to this hearty, seasonal treat.

– Fresh or Minced Ginger

Using minced ginger is an easy way to get great ginger flavor. As in the case with the cinnamon, nutmeg, and cloves, ginger helps create that warm, spicy flavor profile. You could take this recipe to the next level and use fresh ginger if you’re feeling extra! So delicious and so good for you.

The method.

Preheat oven to 375 Degrees Fahrenheit.

In a large bowl, combine 2 cups flour, baking powder, baking soda, salt and spices together.

In a medium bowl, beat eggs with a hand mixer for one minute. Add in pumpkin, maple syrup, vanilla, melted butter, milk, and ginger. Beat wet ingredients with hand mixer.

Add wet ingredients into dry ingredients and beat with hand mixer to combine.

Spoon into lined muffin tin.

Combine brown sugar, flour, and cold butter into a crumbly mixture. Spoon onto uncooked muffins.

Bake 22-26 minutes or until a knife comes out clean. Cool slightly before eating.

There you have it! Delicious, healthy, seasonal muffins! Let me know if you try them out! I’d love to hear your thoughts!

FAQ about Muffins:

Could I substitute all-purpose flour, dairy free milk or white sugar in this recipe?

The easy answer is yes! Absolutely! While I have never tried these alternatives, I would think you could substitute one for one!

Could I use this same recipe to make smaller or mini muffins?

Yes, you could make these any size. Make sure to just adjust your bake times accordingly. Smaller muffins won’t need to cook as long.

What sort of add-ins would you recommend for these muffins?

Chocolate chips are a classic! Raisins, apples, or dates would also be delicious!

Can you freeze these muffins?

These muffins freeze beautifully! I’d recommend waiting until they are cool and placing them in a large plastic container with a lid. Pop them in the freezer, and then pull one out when you need!

  • If you are making your own pumpkin puree, make sure to blend it well before using in this recipe to avoid stringy pumpkin!
