Ginger Molasses Cut-Out Cookies

Ingredients
  

Cookies

  • 1/2 cup unsalted butter room temperature
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 tsp minced ginger
  • 1/2 cup molasses
  • 2 cups all-purpose flour (plus a little extra for rolling out cookies)
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp cloves

Decoration

  • 1.5 cups powdered sugar
  • 6 tsp milk
  • 1 tsp almond extract
  • 1 cup candy

Instructions
 

Cookies

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream butter and sugar with mixer.
  • Mix in egg, vanilla, ginger, and molasses.
  • In a medium bowl, gently stir flour, salt, baking soda, cinnamon, nutmeg, and cloves.
  • Pour dry ingredients into wet ingredients, and combine with mixer.
  • Lightly flour your counter, and roll dough out with a rolling pin.
  • Line two cookie sheets with parchment paper.
  • Cut out shapes, and carefully place them on the pans (you may want a spatula for this).
  • Bake for 12 minutes or until tops are cracking and sides are slightly golden. Let cool completely.

Decoration

  • Combine powdered sugar and milk.
  • Place in Ziploc bag, and cut a small hole in the bottom corner of the bag.
  • Decorate with piped icing and candy.

Notes

  • Make sure to give a lot of space on your pans for these cookies to rise. They will puff up and spread!
